4 crayfish tails ½ finely diced onion 1 clove of chopped garlic 1 potato peeled and diced into ¼ inch squares handful of wild mushrooms 4oz of samphire double cream 2 fluid onces of dry white wine salt and pepper illustration by jasmine thomas method saute half of your onions and garlic in a hot pan with olive oil. once onions are soft, place onions, cray- fish tails, 2 fluid onces double cream, egg yolk and a pinch of salt and pepper into a food blender. blend until smooth mousse texture. place chicken fillet skin side down on a chopping board and cut a small pocket into the chicken fillet and fill the pocket with the crayfish mousse pre-heat oven to 200°c and heat skillet pan to high temperature.season chicken with salt and pepper lightly coat with olive oil. place chicken fillet into skillet, skin side down and cook till a golden colour. turn over chicken and place chicken into preheated oven for 10-12 minutes depending on size of chicken fillet. whilst waiting. lightly drizzle diced potatoes into a hot skillet pan. once the potatoes are golden in colour, place potatoes in preheated oven for 10-12 minutes. making the sauce is simple. place remaining onion in a pan and drizzle with olive oil and cook until soft. deglaze pan with white wine and reduce by half. add 2 fl oz of double cream and samphire. reduce until desired sauce consistency in a hot pan, drizzled in olive oil, add the wild mushrooms. season with salt and pepper and saute until cooked through and soft. place saute mushrooms in centre of plate. on top of mushrooms place chicken fillet and drizzle with samphire cream sauce and garnish with parmitier potatoes. ffres recipe section close scottish salmon × ffres scottish salmon ingredients 4oz fillet of salmon 1 orange rocket leaves saffron (pinch) 4 tblspoon olive oil 1 tblspoon orange juice 1 tblspoon orange vinegar ½ tblspoon english mustard salt and pepper illustration by jasmine thomas method heat skillet pan on hot temperature, drizzle lightly with olive oil. lightly season salmon fillet with a pinch of salt and pepper. place salmon fillet onto hot skillet and cook for 4 minutes, turn over and cook for another 4 minutes. remove pan from heat, set to one side and leave salmon to rest. combine olive oil, saffron, orange juice, vinegar, english mustard and whisk the ingredients together. in a separate bowl, grab a handful of rocket leaves and lightly coat the leaves in salad dressing. with a knife remove the skin of the orange and cut out 4 segments of orange. place rocket leaves in the centre of the plate. remove salmon from the skillet pan and place the salmon on top of the rocket leaves. drizzle the remaining dressing over salmon and around the plate finally, garnish the plate with orange segments. ffres recipe section close welsh lamb × ffres welsh lamb ingredients 8oz lamb rump 4 baby new potatoes 1 clove of roasted garlic 2 leaves of chopped mint 4 baby carrots 4oz of chopped root vegetables ½ pint of madeira olive oil ½ diced onion teaspoon of red current jelly salt and pepper illustration by jasmine thomas method preheat oven to 200°c. sear the skin of the lamb rump in a hot skillet pan, lightly drizzled with olive oil and season with a pinch of salt and pepper. place lamb rump, root vegetables, onions, madeira into an oven safe dish, cover and place into the preheated oven, lid or foil recommended. cook for approximately 1 hour. boil new potatoes in salted water until cooked. boil baby carrots in salted water until cooked. remove lamb from oven and take the lamb out of cooking pot. through a sieve, separate the root vegetables from the cooking stock. place cooking stock in a pan and place over a high heat, add red current jelly and reduce stock until appropriate sauce consistency. crush new potatoes, mint, garlic, salt and pepper, and a drizzle of olive oil into a ring mould. place cooked root vegetables and crushed potatoes onto the centre of the plate and place the lamb rump on top. drizzle over with the reduced madeira stock and garnish with baby carrots. ffres recipe section close strawberry shortbread × ffres strawberry shortbread ingredients 500 fl oz whipped cream sliced fresh strawberries blueberries fruit coulis 125g caster sugar 180g plain flour illustration by jasmine thomas method heat oven to 190°c beat the butter and the sugar together
